My son was diagnosed with celiac disease, what causes this? What foods can he eat??


Question: HELP!!!!!
Answers: Get your hands onthe book The Gluten Free Bible it is a wonderful, lifesaving wealth of information on every aspect of Celiac/ gluten intolerance- it covers everything from medical to personal to social issues that are encountered when having to live on a gluten free diet.

There are many good cookbooks- The Gluten Free Gourmet series is good - you can get many at the local library- I suggest checking them out before buying them.

In the meantime, you can look up recipes online for breads , muffins, pastries, etc made with brown rice flour, bean flours, quinoa four and other not commonly used but wonderful flours that can be found at most health food stores.
If you are interested in any specific recipes, feel free to email me, I have tried different recipes from different sources and my daughter who is a chef in the making has altered some recipes she has found to her liking. I will be morehtan happy to share them
Celiac disease is caused by a genetic sensitivity to gluten in foods. Gluten is found in wheat. Its important he learns to monitor his food and avoid eating foods with gluten in them. If he ignores this he can become very sick and may develop cancer later in life( non hodkins lymphoma).

Once you both learn how to avoid gluten he should live a healthy life.

Celiac is an allergic reaction in the intestines to gluten therefore requires a gluten free diet.There are lots of gluten free goodies that can be found at health food stores, Pizza; cookies; candies;breads etc. etc. try the different kinds to see which ones he likes. You can also get gf food online at the gluten free mall. I like Amy's rice crust Pizza (the center tends to be a quite soggy but the outer 2 or 3 inches is great); Pamela's Pecan chocolate chunk shortbread cookies; Pamela's brownie mix; Sami's bakery millet and flax bread; Tinkyada rice pastas(other brands get soggy); Seeds of change organic salad dressings are gf or you can use oil and gf vinegar. Pacific make gf soups. Rice Divine Mud pie frozen dessert is gf and lactose free.Glutino makes wafers that taste like kitkat bars.Products that contain maltodextrin, modified food starch, and malt may not be gf. And of course no wheat, oats?,rye or barley. Some people are more sensitive than others and may need to be sure that their food is not crossed contaminated with products containing gluten.This diet must be adherd to for life.

P.S.Also you can eat out gf easily at outback steakhouse, PF Chang's China bistro,Carraba's Italian Grill, Bonefish grill(these all have gf menus! Check their website for a printable version) Chipotle Mexican grill (ask head manager) Long Horn steakhouse(Tell the server no seasoning on veggies or steak), Their french fries can be baked w/o seasoning in the oven. You can google search celiachandbook, they have a good list of gluten free resturants.
You got some good answers, so Ill just add my two cents! :)
First, Celiac is highly hereditary so you, your spouse and all other children should be tested. It is very common for Celiac to run in families.

Secondly, there are support groups out there! Try www.csaceliacs.org and click Local Support. U can find lots of other ppl in the same situation and it does feel better to talk!
